Instructions
Preheat your oven to 190C/400F. Line a cookie sheet with parchment paper and set aside.
Place the almond flour, xanthan gum, baking powder, and salt into a bowl. Mix and set aside.
Place the ghee, coconut milk, and apple cider vinegar into a saucepan over medium heat. Whisk together. Bring to a simmer then remove from the heat.
Add the ghee mixture into the almond flour mixture and combine.
Add the eggs and parmesan and mix to a dough consistency.
Use a #60 cookie scoop to portion the dough, roll each portion into a ball and place onto your prepared cookie sheet.
Bake for 20 minutes, or until the rolls start to brown on the top.
Leave to cool for 10 minutes before enjoying!
