Instructions
In a small bowl add the coconut flour, almond flour, erythritol, baking powder, and lemon zest. Mix well.
Add the remaining ingredients and mix until just combined.
Grease a large microwave-safe mug, bowl or ramekin and pour in the batter.
Microwave for 1-2 minutes, until the cake has risen and there is no raw batter visible.
