Instructions
Preheat your oven to 175C/350F. Line a 9in square pan with parchment paper and set aside.
Place the almond flour, coconut flour, erythritol, pecans, xanthan gum, and baking powder into a mixing bowl. Mix well.
Add the butter, vanilla, and eggs and mix well.
Spoon into the base of your prepared pan and spread out evenly.
Bake for 15 minutes, until the edges are golden brown. Set aside to cool.
In a mixing bowl, add the eggs, erythritol, maple syrup, butter, and vanilla. Whisk together, until well mixed.
Spread the pecans over the cooked based and pour over the egg mixture.
Bake for 20-25 minutes until the topping is set.
Leave to cool in the pan for 30 minutes.
Slice and enjoy!
