Servings: 24 bites
- 2 heads Broccoli
- 1/2 cup frozen spinach defrosted and drained well
- 1/4 cup Scallions sliced
- 1 Lemon Zest only
- 1 cup Cheddar Cheese grated
- 1/4 cup Parmesan cheese grated
- 2 eggs
- 1/3 cup Sour Cream
- 1/2 teaspoon Pepper
- 1/4 teaspoon Salt
Preheat fan forced oven to 180C/355F.
Cut broccoli into evenly sized florets and place in a microwave safe container with ¼ cup of water. Microwave on high for 3 minutes or until the broccoli is tender. Drain well and allow to cool.
Chop the broccoli into very small pieces, You should end up with approximately 2-2 ½ cups.
Place the chopped broccoli in a bowl with all the remaining ingredients and mix well.
Pour the mixture into a 11 x 7in rectangle brownie pan, lined with parchment paper, and smooth into an even layer.
Bake for 25 minutes, until the bites are puffed and browning.
Allow to cool for 10 minutes, before cutting into 24 squares.
