Place all ingredients, except xanthan gum, into a small saucepan over high heat.
Bring to the boil then whisk in the xanthan gum. Boil for another 3-5 minutes until the sauce starts to thicken.
Remove from the heat and set aside to cool.
Once cool, pour into a jar and store in the fridge.
