Keto Candy – Sugar Free Coconut Ice – Sweet Gluten Free Treats

Coconut Ice is a very sweet keto candy snack, that everyone will love. We’ve created for you a ketogenic version of this childhood favorite Coconut Ice.

This tasty Low-Carb Coconut Ice keto candy is best kept in the refrigerator as coconut oil melts at any temperature higher than 24C/76F.

We recommend allowing it to soften slightly at room temperature before eating.

Ingredients for your Keto Candy Coconut Ice

  • 4oz of Coconut Oil
  • 4.5oz of Unsweetened Shredded Coconut
  • One teaspoon of Liquid Stevia
  • 3oz of Powdered Erythritol
  • One Egg White
  • One Teaspoon of Vanilla Extract
  • Three Drops of Red Food Coloring
  • Half of a Teaspoon of Strawberry Extract

How to Make Keto Coconut Ice Candy. This easy recipe make a delicious firm candy that is classic sweet treat in Britain and Australia.
How to Make Keto Coconut Ice Candy
  1. In a bowl mix together the shredded coconut, erythritol, stevia and vanilla with a hand mixer on low.
  2. Melt the coconut oil in a small pan over low heat.
  3. Add the melted coconut oil to the shredded coconut mixture and mix well.
  4. Add the egg white and mix well.
  5. Press half the mixture into an 8in square dish and set aside.
  6. After the coconut ice is set, cut into 16 pieces and enjoy!

Unit Conversion

Ingredients

  • 4 oz Coconut Oil melted
  • 4.5 oz Shredded Coconut unsweetened
  • 1 teaspoon Liquid Stevia
  • 3 oz Erythritol powdered
  • 1 Egg White
  • 1 teaspoon vanilla extract
  • 3 drops Red Food Coloring
  • 1/2 teaspoon Strawberry Extract

Instructions

  • In a bowl mix together the shredded coconut, erythritol, stevia and vanilla with a hand blender on low.
  • Melt the coconut oil in a small pan over low heat.
  • Add the melted coconut oil to the shredded coconut mixture and mix well.
  • Add the egg white and mix well.
  • Press half the mixture into an 8in square dish and set aside.
    Low Carb Coconut Ice
  • Add the food colouring and strawberry essence to the remaining mixture and mix well.
  • Press the pink mixture on top of the white mixture in the square dish and set in the fridge for 1 hour.
    Sugar Free Coconut Ice
  • After the coconut ice is set, cut into 16 pieces and enjoy!

Do you have any suggestions how to incorporate egg whites without introducing possibility of salmonella from the uncooked version?
